Oil in wok, stir fry onion, garlic, sambal for 1-2 minutes.
Add lemongrass and tomato, stir fry for 1-2 minutes.
Add coconut milk and soy. Mix together.
Add veggies, cook together.
Stir in peanut sauce.
Serve on a rice donut with a lemon wedge and cilantro garnish.
