Indo Vegs in Coconut Gravy

Ingredients

  • onion
  • ½ Tablespoon garlic
  • teaspoon sambal
  • ½ teaspoon lemongrass
  • cup tomato (chunks)
  • ¼ cup coconut milk
  • 1 Tablespoon soy sauce
  • pea pods
  • broccoli
  • cabbage
  • zucchini
  • baby corn
  • bamboo shoots
  • 1 Tablespoon peanut sauce

Instructions

  • Oil in wok, stir fry onion, garlic, sambal for 1-2 minutes.
  • Add lemongrass and tomato, stir fry for 1-2 minutes.
  • Add coconut milk and soy. Mix together.
  • Add veggies, cook together.
  • Stir in peanut sauce.
  • Serve on a rice donut with a lemon wedge and cilantro garnish.
