Masoor Dal (Curried Red Lentil Soup)

Ingredients

Step One

  • 4 cups oil

Step Two

  • 5 cups onions
  • 4 Tablespoons garlic
  • teaspoons ginger

Step Three

  • 11 Tablespoons curry powder

Step Four

  • 6 teaspoons clove
  • 8 cups potato (peeled and diced)
  • 6 cups carrot (coins - scant)
  • 16 cups red lentils (rinsed and drained)

Step 5

  • 4 gallons water
  • veggie powder for stock
  • 5 Tablespoons black pepper
  • 6 Tablespoons honey
  • 2 Tablespoons red wine vinegar

Instructions

  • Step One: Heat oil.
  • Step Two: Add garlic, ginger, onions. Stir 2-3 minutes until onions begin to brown.
  • Step Three: Add curry powder, 1-2 min, stirring constantly. Do not omit this step.
  • Step Four: Add cloves, potatoes, carrots. Stir.
  • Step Five: Add remaining ingredients and bring to boil. Cover partially, reduce heat, cook until lentils are soft.
  • Cool.
  • Blend briefly. Shouldn't be smooth.
