Mock Beef with Mock Beef Sauce ("Mock Stegasaurus")

Ingredients

  • 2 pounds mock beef (dry (4 pounds), processed lightly)
  • 10 scallions (shredded)
  • 4 cups bamboo (chopped)
  • 4 Tablespoons garlic
  • 2 Tablespoons ginger
  • ½ cup brown bean sauce (+/-)
  • veggie stock (volume equal to what is needed to reconstitute the beef and cook down)

Instructions

  • Split into 2 batches.
  • Heat 3T oil, add 1/2 ginger, garlic, onions. Cook.
  • Add bean sauce and about 1/2 veg stock, cook down.
  • Add 1/2 "beef", mix well with bamboo.
  • Turn off heat, add 1/2 scallions. Mix.
  • Repeat with second batch. Add sauce over "beef."

Notes

No mushrooms, peanut, sesame, nuts.  Low oil, sugar.
