Mock Beef with Mock Beef Sauce ("Mock Stegasaurus")

mock beef
(dry (4 pounds), processed lightly)
10
scallions
(shredded)

cups
bamboo
(chopped)

Tablespoons
garlic
2
Tablespoons
ginger
½
cup
brown bean sauce
(+/-)
veggie stock
(volume equal to what is needed to reconstitute the beef and cook down)
Instructions
Split into 2 batches.
Heat 3T oil, add 1/2 ginger, garlic, onions. Cook.
Add bean sauce and about 1/2 veg stock, cook down.
Add 1/2 "beef", mix well with bamboo.
Turn off heat, add 1/2 scallions. Mix.
Repeat with second batch. Add sauce over "beef."
Notes
No mushrooms, peanut, sesame, nuts. Low oil, sugar.
