Instructions
Salad
Rub duck with kosher and pepper and a small pinch of ground cinnamon.
Smoke duck for 25 minutes and cool (see Smoking Chips below).
Toss sliced smoked duck with Orange Mango Viniagrette, candied walnuts, and greens.
