
Ingredients
Smoked Duck
- duck breast
- Sichuan pepper
- cinnamon (ground)
- candied walnut
- mesclun greens
Dressing
- ¼ cup mango (dried)
- 1 orange
- ⅙ cup honey
- ½ Tablespoon ginger
- ½ cup rice wine vinegar
- ½ cup oil
- ⅙ cup mango puree
Instructions
Salad
- Rub duck with kosher and pepper and a small pinch of ground cinnamon.
- Smoke duck for 25 minutes and cool (see Smoking Chips below).
- Toss sliced smoked duck with Orange Mango Viniagrette, candied walnuts, and greens.
Orange Mango Viniagrette
- Blend dressing ingredients.

Ingredients
- 2 bags Mesquite Chips (or 1 bag Mesquite Chips and 12C Plane View Farm Chips if available)
- 2 cups rice (raw)
- 2 cups brown sugar
- 2 cups black tea (loose)
- 2 cups orange peel (dried)
- 2 cups chili peppers
Instructions
- Mix well, being sure to break down brown sugar clumps.
- Store in airtight jugs for smoking.
