Smoked Duck Salad

Smoked Duck

  • duck breast
  • Sichuan pepper
  • cinnamon (ground)
  • candied walnut
  • mesclun greens


  • ¼ cup mango (dried)
  • 1 orange
  • cup honey
  • ½ Tablespoon ginger
  • ½ cup rice wine vinegar
  • ½ cup oil
  • cup mango puree



  • Rub duck with kosher and pepper and a small pinch of ground cinnamon.
  • Smoke duck for 25 minutes and cool (see Smoking Chips below).
  • Toss sliced smoked duck with Orange Mango Viniagrette, candied walnuts, and greens.

Orange Mango Viniagrette

  • Blend dressing ingredients.

Smoking Chips

  • 2 bags Mesquite Chips (or 1 bag Mesquite Chips and 12C Plane View Farm Chips if available)
  • 2 cups rice (raw)
  • 2 cups brown sugar
  • 2 cups black tea (loose)
  • 2 cups orange peel (dried)
  • 2 cups chili peppers


  • Mix well, being sure to break down brown sugar clumps.
  • Store in airtight jugs for smoking.
