Ingredients

  • onions
  • broccoli
  • sweet potatoes (or carrots)
  • pea pods
  • peppers
  • red cabbage (just a little)
  • 5 shakes Sesame-Salt Mix (see below)
  • Sweet Red Curry Sauce (see below)
  • fish (bass, snapper, trout, and firm flesh variety)

Instructions

  • Start to grill or steam fish.
  • Oil in wok, stir fry veggies.
  • Add Sesame Salt mix. Heat sweet curry sauce separately.
  • Serve with veggies on plate, fish on veggies, sauce to nap fish.
  • Garnish with shredded radish and scallions (julies).

Korean Sesame Salt

  • 1 cup sesame seeds (toasted – preferably with hulls)
  • 2 Tablespoons salt (kosher)

Instructions

  • Process together in spice mill.

Sweet Curry Sauce

Ingredients

  • 4 cups orange juice
  • 3 Tablespoons red curry paste
  • 2 cups Karo syrup
  • ½ cup sugar

Instructions

  • Reduce orange juice by half. Mix remaining ingredients together well.
