Dal Condiment (Onion Concassé)

  • 4 onions (small dice)
  • cup jalapeños (minced)
  • ½ cup garlic (chopped)
  • 4 cups oil
  • 8-10 bay leaves


  • In heavy bottom sauté pan, heat oil and bay leaves on medium high until bay leaves "crisp."
  • Remove bay leaves.
  • SLOWLY add diced onion, garlic, jalapenos. Cook until golden.


Presumably used for dal-based recipes like the Curry Based Soups!
