- 4 onions (small dice)
- ⅓ cup jalapeños (minced)
- ½ cup garlic (chopped)
- 4 cups oil
- 8-10 bay leaves
- In heavy bottom sauté pan, heat oil and bay leaves on medium high until bay leaves "crisp."
- Remove bay leaves.
- SLOWLY add diced onion, garlic, jalapenos. Cook until golden.
