Ingredients

  • 6-7 ounce chicken breast (marinated)
  • ½ cup coconut milk
  • 1 Tablespoon curry paste
  • 1 Tablespoon fish sauce
  • golden raisins
  • scallions (dicers)
  • carrots
  • rice (day-old, cold)
  • zucchini

Instructions

  • Place marinated chicken on well lubricated grill.
  • In a saute pan, heat up curry, coconut milk, and fish sauce. Add golden raisins, scallions.
  • Add rice and heat up.
  • Steam carrots and zucchini.
  • Slice chicken and plate on large black plate.
