Spicy Hunan Black Bean Noodles

There are two different recipes for the sauce used on the Black Bean Noodles – this recipe and another named “Hot Black Bean Sauce – Ginger’s Recipe.” I encourage you to make both and then post a comment with your favorite.


  • 3 cups oil
  • 1 cup chopped garlic
  • 1 cup grated ginger
  • 1 pound fermented soy beans
  • 1 cup soy sauce
  • 2/3 cups sambal
  • 3/4 cups apple cider vinegar
  • 2/3 cups sugar
  • 1 Tablespoon salt


  1. Heat the oil
  2. Add garlic and ginger – cook for 2 minutes
  3. Add black beans – cook for 2-3 minutes
    • Stir constantly so nothing sticks
  4. Add remaining ingredients
  5. Turn off heat
