Thai Squid Salad

  • 1 to 1½ pounds squid cut in circles and tentacles
  • 4 Tablespoons lemon juice or lime juice
  • 1 stalk lemongrass cut as squid
  • 2 Tablespoons fish sauce
  • 1 teaspoon sugar
  • 1 tablespoon chilies crushed – or Sambal
  • mint garnish
  • cilantro garnish
  • lettuce
  • cucumber
  • red pepper


  • Boil squid briefly in water – possibly one minute. (One presumes the squid is then drained.)
  • Add blended ingredients, toss.
  • Serve on lettuce with cukes and red peppers.
