Notes
This is the only recipe we have found for Hot and Sour soup. Unfortunately, the directions aren’t entirely clear – perhaps someone from the kitchen can help us figure it out. Among the challenges:
- We don’t know the capacity of the “large stockpot,” so to fill water up to the handles is a tricky instruction.
- There is an ingredient labeled “fungus” that isn’t black mushrooms, but we don’t know what kind of mushrooms (presumably) they would be. Tree ears, perhaps?
- The official menu mentions “Chinese mushrooms, tiger lily buds, bamboo shoots, tree ear mushrooms, tofu, egg, chicken stock,” as ingredients and there is neither tofu or egg in the recipe.
I’m almost sure there were tree ears in this soup.
Tony, you’d know better than most. Did you ever hear tree ears called “fungus?” It would line up with the card that way.
Definitely tree ear fungus! Also, the mushroom tea is the water left from rehydrating dried black mushrooms according to my husband who used to make it there. So excited to make this recipe!
