Thai Pork (Medallions) w/Chili and Mint

Ingredients

  • 4 ounces pork (marinated – see below)
  • ½ fork garlic
  • ½ fork ginger
  • ¼ fork chili paste w/garlic (+ to taste)
  • mock broccoli
  • cauliflower (in season)
  • mushrooms
  • 3 baby corns
  • 3 Tablespoons mint (chiffonade)
  • 1 round sherry
  • 1 Tablespoon soy
  • 1 Tablespoon fish sauce
  • 1 Tablespoon sugar
  • 1 dash sesame oil

Instructions

  • Oil in wok. Brown pork then stir fry a little.
  • Add garlic, ginger, chili paste. Stir fry to blend flavors.
  • Add veggies and mint. Stir fry briefly to blend flavors. Add a little broth to facilitate.
  • Add sherry, soy, fish sauce, sugar, sesame.
  • Serve on rice donut. Garnish with mint.

  • 1 Tablespoon fish sauce
  • 1 Tablespoon sugar
  • ½ teaspoon black pepper
  • 2 Tablespoons cornstarch
