- ⅓ cup tomato (chunks)
- ¼ cup coconut milk
- 1 Tablespoon soy sauce
- pea pods
- broccoli
- cabbage
- zucchini
- baby corn
- bamboo shoots
- 1 Tablespoon peanut sauce
Instructions
- Oil in wok, stir fry onion, garlic, sambal for 1-2 minutes.
- Add lemongrass and tomato, stir fry for 1-2 minutes.
- Add coconut milk and soy. Mix together.
- Add veggies, cook together.
- Stir in peanut sauce.
- Serve on a rice donut with a lemon wedge and cilantro garnish.
