Servings: 500 rolls
Ingredients
- 10 pounds pork (ground)
- 5 pounds sea legs
- 4 cups peanut butter
- 3 Tablespoons black pepper
- 2 Tablespoons cayenne
- 1 can coconut milk (1½ cups)
- 3 cups onions
- 2 bunches scallion (chopped fine)
Instructions
- Halve all ingredients.
- Dice onions, then process smooth in processor.
- Add sea legs and process with pulse action to break down legs.
- Add rest of ingredients except pork.
- Mix 5 pounds of pork with seafood in Hobart.
- Repeat last 4 steps.
- Make meatballs using #30 scoop. [2-2.5 T]
- Put on baking rack on large sheet pan.
- Spray rack with Vegelene (cooking spray).
- Freeze on rack.
Notes
15 pounds of meat – adjust accordingly.
