Chinese Steak with Bacon Wrapped Deep Fried Oysters

Ingredients

  • steak
  • 1 handful onions
  • 1 fork garlic
  • 1 fork ginger
  • red peppers
  • celery
  • bamboo shoots
  • broccoli
  • shiitake
  • 3 fried oysters (see recipe)
  • 2 Tablespoons soy sauce
  • 1 round sherry
  • 1 round sesame oil
  • 1 Tablespoon sugar
  • 1 Tablespoon oyster sauce
  • veggie stock
  • corn starch slurry
  • Salt and Spice Rub (see recipe)

Instructions

  • Liberally dust each side of steak with Salt and Spice rub. Put on grill and cook to temp.
  • When steak is close, pull off and let rest. Put 3 fried oysters under broiler.
  • Stir fry onions, garlic, ginger, peppers, celery, bamboo, broccoli, mushrooms.
  • Add soy sauce, sherry, sesame oil, sugar, veggie stock, oyster sauce, and a little corn starch slurry to thicken.

Ingredients

  • 2 teaspoons star anise (whole)
  • 1 teaspoon clove (whole)
  • 1 teaspoon Sichuan pepper (whole)
  • 1 teaspoon fennel (whole)
  • 2 inch cinnamon stick
  • 1 teaspoon ginger (powder)
  • ¼ cup salt (kosher)

Instructions

  • In a dry sautee pan, roast anise, clove, peppers, and fennel briefly.
  • Combine with cinnamon, ginger powder in a coffee grinder and blend into a fine powder.
  • Mix with salt.

Deep Fried Bacon-Wrapped Oysters

Ingredients

  • 12 oysters (shucked)
  • 1 Tablespoon ginger (fresh, processed)
  • 2 Tablespoons sherry
  • 2 Tablespoons soy sauce
  • ½ cup peanuts
  • ½ cup cashews
  • 2-4 inches Chinese Sausage (dried, cut into thin coins – 1/10")
  • scallions (white part – 12 1/2" pieces)
  • 1 egg
  • ½ cup flour
  • 12 pieces bacon

Instructions

  • Marinate oysters in ginger, soy, sherry.
  • Process nuts into a powder, set aside.
  • Cut sausage into thin coins and prepare scallions.
  • Remove oysters and toss with nut mix, place in a piece of bacon with 2-3 sausage coins and a piece of scallion, wrap it up.
  • Coat each wrapped up oyster in flour/egg/s+p batter and deep fry on med-high until lightly golden brown.
  • Place on paper towels to drain and cool.

Ingredients

  • 2 cups soy sauce
  • ¾ cups sesame oil
  • ¼ cup sugar
  • ¼ cup veggie stock
  • cup ginger (freshly chopped)
  • cup toasted sesame seeds
  • ½ cup scallions (diced)

Instructions

  • Combine, shake, store.
